Chicken Kapsalon with Smoked Cheese

Crisp fries, juicy chicken, melted smoked cheese and a cool, crunchy salad: this is a generous plate of comfort. Garlic sauce ties the layers together, while chili sauce brings as much heat as you like.

Ingredients

For 2. Remove wax, rind or inedible casing before grating cheese. Cup measurements are approximate; use the weights for best consistency.

  • 2 chicken breasts, about 350–400 g (12–14 oz) total
  • 300 g (10.6 oz) oven fries
  • 100 g (3.5 oz, about 1 cup grated) Smoked Natural
  • 60 ml (¼ cup) garlic sauce
  • 2–4 tbsp sweet chili sauce, or hot sauce to taste
  • ½ cup shredded lettuce
  • ¼ cup finely shredded red cabbage
  • ¼ cup diced cucumber
  • 2 tbsp pickled onion
  • 1 tbsp olive oil
  • Salt and black pepper
  • Crispy fried onions, optional

How to make it

  1. Crisp the fries. Bake the fries according to their packet instructions until golden and crisp. Allow about 20–30 minutes, depending on the fries.
  2. Cook the chicken. Flatten the breasts to an even thickness, season with salt and pepper, and cook in the oil over medium heat for about 5–7 minutes per side. Check the thickest part reaches 74°C (165°F). Rest briefly, then slice.
  3. Layer and melt. Divide hot fries between two broiler-safe dishes, or use one sharing dish. Add chicken and grated cheese. Broil (grill) for 3–5 minutes until the cheese is melted and lightly golden.
  4. Add the cool toppings. Take the dishes out of the oven. Top with lettuce, cabbage, cucumber and pickled onion, then drizzle with garlic sauce and your chosen chili sauce.
  5. Eat while crisp. Finish with optional crispy onions and serve immediately.
